Ground Beef and Sweet Potato

Ground Beef and Sweet Potato is healthier than a loaded baked potato and perfect for folks who love sweet potatoes and ground beef.

Ingredients

  • 6-8 sweet potatoes
  • 1 lb ground beef
  • ½ cup red onion chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon paprika
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons tomato paste
  • 2 tablespoons water
  • 1 cup spinach chopped
  • 1-½ cup shredded mozzarella cheese
  • chopped fresh cilantro

Instructions

  • Preheat oven to 425 degrees F. Wash and poke holes in each sweet potato. Wrap in foil and place onto a baking sheet. Bake for 40 minutes. Remove from oven and carefully unwrap sweet potatoes from foil. Let stand to cool slightly.
  • In a large skillet, add beef, onion and garlic. Heat over medium high heat, stirring frequently until beef is browned and no longer pink. Drain grease. Season with paprika, Italian seasoning, salt and pepper. Stir in tomato paste and water and mix, continuing to heat over medium low heat until combined well. Stir in spinach and continue to cook for 1-2 minutes.
  • Slice each sweet potato in half and squeeze open. fluff sweet potato in the skin with a fork. Top with ground beef mixture and cheese. Place into a warm oven until cheese is melted. Top with chopped fresh cilantro and serve.
