I don't know about y'all, but I am a HUGE fan of lemon anything!!! And what is better than just lemon? Well, turning it into a sweet, refreshing desert of course.
It reminds me of summer in the back yard, on a nice sunny day, swimming in the pool with family and friends, while barbecuing some burgers on the grill, some roasted corn and some delicious potato salad.
Oh, and don't forget some nice cold freshly brewed Sweet Iced Tea. Then add some fun in the sun, great company and the to top it off, this DELICIOUS, refreshing EASY LEMON PIE!!

This recipe brings back so many memories of our 4th of July celebrations, eating al fresco at our wooden picnic table, in our back yard, surrounded by the whole family, while waiting to watch the fireworks go off.
Then of course there are those bright shinny, South Florida summer days in the back yard as a kid growing up.
I remember my mama cooking, baking, making delicious treats or something refreshing and amazing almost every day during the summer for my family and friends.
She was always whipping something delicious up in the kitchen while watching us play and swim from the kitchen window.
Us girls always wanted to be in the pool, all day, every day with as many friends over and of course, she always out did herself for us. She always loved to see the smile on our faces when we had a full belly.
But don't forget the old wives tale, "Y'all wait 30 min before heading back into the pool or you'll get a tummy ache"
This pie today would blow her mind at how simple and easy it is to make. Remember, usually back then it could take what seemed like forever to make almost anything. Because we didn't have things like pre-made pie crusts.
BUT NOT THIS ONE! This one is easy peasy, lemon squeezy, with the modern day pre-made gram cracker crust.
Heck, it even comes in it's on little tin, so when its finished, just recycle the tin and move on with your merry day!
I'm all for absolutely anything that will help with an easy clean up! The less I have to wash, the better!
How to Make this Easy Lemon Pie Recipe
Easy Lemon Pie Recipe Ingredients:
- 1, 9" pre-made graham cracker pie crust
- 3 egg yolks
- 1 can, 14 oz, sweetened condensed milk
- ½ cup lemon juice
- 1 tub, 8 oz, whipped topping, thawed
- 1 lemon

You can whip it up in absolutely no time, the day of your gathering or even the night before.
The flavor of this amazing lemon filling reminds me of lemon curd and the filling for a lemon meringue pie, but so much fluffier and creamier. Thank goodness for sweetened condensed milk!
We also add egg yolks that are beat with the mixer that makes it all nice fluffy, for structure and fresh lemon juice for flavor. You won’t believe how delicious, easy and silky smooth this filling is!
My mouth is already salivating and wanting to hop in the kitchen to make another one!!
Easy Lemon Pie Recipe Directions:
Preheat oven to 325 degrees.
Beat egg yolks with a mixer or by hand if you want to pump up those arm muscles.
Add sweetened condensed milk and lemon juice and beat well.
Pour into prepared pie crust. (Don't forget to lick the bowl. You want to make sure it tastes absolutely perfect, right?) ::WINK WINK::
Bake for 30-35 minutes or until center is set and crust is golden brown. Remove from oven and let cool completely before refrigerating for 3 hours.
(Waiting to taste the finished master piece, is the hardest part of this recipe! Pure torture if you ask me.)
Top with delicious, fluffy whipped topping, lemon zest and fresh slices of lemon if desired.
Store your leftover Easy Lemon Pie Recipe covered and in the refrigerator. (Remember my little tip above to make sure you save some for your mid-night sweet tooth!)
