    A Classic Summer Pie

This Lemon Pie brings back so many memories of our summer celebrations, eating al fresco in our backyard, surrounded by the whole family, while waiting to watch the fireworks go off.

I remember my mom cooking, baking, making delicious treats or something refreshing and amazing almost every day during the summer for my family and friends.

She was always whipping something delicious up in the kitchen while watching us play from the kitchen window.

    Lemon Pie Tips

The flavor of this amazing lemon filling reminds me of lemon curd and the filling for a lemon meringue pie, but so much fluffier and creamier. Thank goodness for  sweetened condensed milk!

We also add egg yolks that are beat with the mixer that makes it all nice fluffy, for structure and fresh lemon juice for flavor. You won’t believe how delicious, easy and silky smooth this filling is!
