    This Corn and Feta Cheese Salad Recipe is an easy side dish recipe perfect for summer barbecues! We love this this easy summer salad! Make this side salad for picnics, potlucks or even for lunches and dinners!

    I don't think that I never really appreciated Feta until I ate it in Greece...I have basically been missing out for my entire life! Ever since my first trip to Greece in 2016, I have been insanely obsessed with Feta Cheese.

    You can bake up this easy Corn & Feta Cheese Salad Recipe and store it in your fridge or an air tight sealed container a day ahead - anything longer than that and the cheese will get kind of runny and mushy. 

    Ingredients needed to make this Corn and Feta Cheese Salad Recipe

    • 2 cans (15 oz each) whole kernel corn, drained
    • 1 dry pint grape tomatoes, halved
    • ½ cup cucumber, diced
    • ¼ cup red onion, thinly sliced
    • 4 tablespoons extra virgin olive oil
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • 1 teaspoon hot sauce
    • 2 teaspoons dried basil
    • ¼ cup feta cheese

    Directions for making this Corn and Feta Cheese Salad Recipe

    In a large bowl, add corn, tomatoes, cucumber and red onion. Stir well to combine.

    In a small bowl add olive oil, salt, pepper, hot sauce and basil. Stir well to combine and let set for 10 minutes. Pour dressing into bowl and mix well to coat. Serve topped with feta cheese.

    To make ahead, refrigerate until ready to serve. Then top with feta cheese just before serving.
