    Summer Watermelon Pie Recipe

    It is about 1,000 degrees in Miami this summer. Okay, so if I am honest, that may be a tiny bit of a hyperbole. So let us just suffice it to say that it is hot as hell in Miami and that we are all sweating to death!

    It has been so hot that I bought a little lounger pool off Amazon for the backyard! While hanging in the lounger, of course we want a glass of wine and snacks.

    There are always snacks! A girl's gotta eat, you know?

    This Summer Watermelon pie recipe is so light and refreshing, and it not too overly sweet. It is just perfect for those long, lazy - and hot - days of summer, whether you live in South Florida or anywhere else in the world!

    I love a good fresh fruit salad, or an ambrosia salad, and this pie has that sort of feel to it. It's light and refreshing, and you would probably also really enjoy it even without the crust! Why not?

    It is summertime, all bets are off when it comes to ANYTHING that might cool us down, right?!

    I am a big fan of watermelon in general, and I tend to buy a lot of it during the summer because watermelon is a very light, tasty fruit to snack on that doesn't have a lot of calories or sugar.

    I try to always have either strawberries or watermelon in the fridge for when I want something sweet but do not want to blow the bank on my carbohydrate budget!

    So while this pie clearly is not low carb, it is insanely delicious and you can rest easy knowing that you are not getting a ton of carbs, as Cool Whip is pretty low carb and the majority of the carbohydrates in this Recipe comes from the pie crust! WIN WIN!

    How to make this Summer Watermelon Pie Recipe

    Ingredients needed to make this Summer Watermelon Pie Recipe

    • 1 small package (3 oz size) watermelon flavored gelatin
    • ¼ cup water
    • 2 cups watermelon, seeds and rind removed and cubed in small pieces
    • 1 large tub (16 oz) whipped topping, thawed
    • 1 graham cracker crust (9 inch)

    Directions for making this Summer Watermelon Pie Recipe

    In a large microwave safe bowl, add ¼ cup water. Place in the microwave and heat until boiling. Remove from microwave and stir in gelatin until dissolved.

    Let set until cooled to room temperature.

    Stir in whipped topping and watermelon. Spoon mixture into prepared crust. Refrigerate for 4 hours or until ready to serve.
