Chocolate Pumpkin No Bake Cookies Recipe

It’s time to pumpkin spice all the things, guys. Fall is quickly approaching and I can’t get enough pumpkin goodies!

This Chocolate Pumpkin No Bake Cookies Recipe is a great way to make a quick treat for a church social, a family gathering, or even to give as a hostess gift for that holiday get together you were invited to at the last minute!

Chocolate Pumpkin No Bake Cookies Recipe

Ingredients
1/2 cup peanut butter
1/2 cup butter
1/2 cup milk
2 cups sugar
1/3 cup pumpkin purée
5 T cocoa powder
4 Cups dry oats

Chocolate Pumpkin No Bake Cookies Recipe

Directions
In a medium sized saucepan, add cocoa powder, butter, milk, and sugar. On medium heat, bring ingredients to a boil, mix, and boil for 3 minutes.

While waiting, in a large mixing bowl, add oats, pumpkin purée, and peanut butter and set aside.

Now that your mix has boiled for 3 minutes, turn off heat and pour over the oat mix, and mix well and scoop a spoonful at a time onto a parchment paper lined pan. After you scooped out all your cookie mix, let cookies cool for a couple hours or until hardened (put in the fridge for a quicker result)!

    “½ butter” Does this mean 1/2 cup? or 1/2 stick? I’m dying to make these but don’t want to mess them up!

      Pretty sure the measurement is 1/2 cup butter, is that correct? Regardless, I think I’ll try it now! Have some pumpkin needing to be used and it is SO HOT & HUMID outside. Sweating just thinking about turning on the oven.

    I am in shock knowing that someone else knows how to make or has heard of No Bakes! They are a childhood staple of mine !! Anytime I talk about this no on knows what I am talking about. This makes me very happy!

    These taste sooooo good!!! I love the fact that I can eat them for breakfast and not feel so guilty about it. Heehee. =]
    Although I must have done something wrong, because they have been in the fridge about a day and still aren’t hardened.
