This Chicken Bacon Cranberry Cracker Appetizer Recipe is so tasty and it’s perfect for those days spent poolside, or if you don’t have a pool, under the trees enjoying the shade and summertime breeze! This Chicken Bacon Cranberry Cracker Appetizer Recipe is a good make ahead (at least the dip) before a party! Not to mention they look amazing displayed for your guests!
Chicken Bacon Cranberry Cracker Appetizer Recipe
Ingredients
- 1 cup chopped, cooked chicken breast (cut the pieces small, it needs to fit onto a cracker.)
- 2 green onions, cut
- 1/4 cup cut dried cranberries
- 2 slices cooked and cooled bacon, cut into small pieces – or try 1-2 Tablespoon of real bacon bits
- 3 tablespoons creamy Caesar dressing
- 1 tablespoon honey mustard
- 1 box Triscuit Rosemary & Olive Oil Crackers
- 1 handful spinach (baby works best, but tear any size spinach to fit onto cracker) or try romaine, cut or torn into small pieces
Directions
Combine chicken breast, onions, cranberries, bacon, dressing and honey mustard. Mix well in a dish and refrigerate at least an hour.
Top crackers with spinach pieces and chicken mixture just before serving. (I use my tablespoon scoop to top crackers). Serve immediately.
