    Banana Nut Muffins Recipe

    I don't know if you've noticed, but I've been using coconut oil in my recipes for quite a while. While having Mother's Day breakfast with mom and one of my sisters, my mom asked me if I'd ever used apple sauce in place of oil - the truth is, I haven't bought or used vegetable oil or canola oil in over a year.

    Ever since I began hearing about GMOs, I've tried to find non-GMO replacements for some of the every day foods we eat, and it was just way too easy to stop using vegetable oil. Coconut oil tastes every bit as delicious, and it's much more expensive (at least, not when I buy it at Walmart). I even use coconut oil in the place of butter and shortening in various recipes. So far, I haven't found a single thing that it didn't taste great in!

    Tropical Traditions recently asked to send me a free jar to give their coconut oil a try, and I was all like YES, PLEASE! I used it to make these delicious banana nut muffins and now I get to give one of my lucky readers a jar too!

    Banana Nut Muffins Recipe

    Ingredients
    3 ripe bananas
    ⅓ cup Tropical Traditions coconut oil
    ¾ cup granulated sugar
    1 large egg
    1 teaspoon pure vanilla extract
    1 teaspoon baking soda
    pinch of salt
    1.5 cups of all purpose flour
    ½ a cup of chopped pecans

    Directions

    Preheat your oven to 350 degrees and spray a muffin tin with non-stick cooking spray or line with cupcake liners.

    In a large bowl, beat coconut oil, bananas, sugar, egg, baking soda, salt and vanilla until everything is thoroughly combined. Gradually add the flour and beat at low speed for about a minute. Stir in pecans.

    Pour into muffin tin and bake at 350 degrees for about 15 minutes and let cool before serving! These are so moist and delicious that you don't even need butter!

    I love cooking with coconut oil, and this brand is heavenly. While I was scooping it out into my mixer, it smelled lightly of coconut, but there was actually no coconut flavor in my muffins. I can't tell any difference between using coconut oil and butter in my baked goods, and I highly recommend trying it out!

      I love coconut oil, but my favorite way to use it is to just eat it off a spoon if it is a really good tasting one like this.

      I use coconut oil every morning to boost my metabolism, usually in a cup of coffee or tea. I also use it instead of butter or olive oil for frying.
