Just like many children, one of my favorite holidays as a child was Easter! We always had so much fun waiting for the Easter bunny to bring us our Easter baskets filled with candy and little trinkets, and as I got older and my parents began going to church, my sisters and I loved the Easter egg hunts and the the games we would play in Sunday school on Easter Sunday. The big Easter dinner that the entire family came to, eating my Dad's delicious Easter ham...it was always a huge occasion in my mind, and I have had such fond memories of it as I have grown older. This Easy Easter Bunny Cupcakes Recipe is just the sort of thing that my family would serve as a dessert at our family Easter dinner, as my mom is sooo incredibly talented when it comes to decorating baked goods!

I was just searching through my photos looking for pictures of my mom's Easter creations and our annual Easter egg hunt that I used to host for the children...unfortunately, my organizational skills when it comes to photos are absolutely lacking...and I could only find this one photo of my niece, Roxanna, and I in 2017. What better way to get the kids involved than to have an Easter egg hunt and bake up this fun Easy Easter Bunny Cupcakes Recipe?

Now, this Easy Easter Bunny Cupcakes Recipe uses a boxed cake mix, but you can also use your own cupcake recipe. You can choose any flavor, really, though we used a vanilla cake mix for this recipe. If you prefer chocolate, then go right ahead and use chocolate! It will be a little brown bunny beneath the frosting "fur!" You can also use strawberry cake mix or even funfetti cake mix to really shake things up! The important thing is to have fun with the recipe!
An Easy Easter Bunny Cupcakes Recipe
Ingredients
- A boxed cake mix or your favorite cupcake recipe
- White Frosting
- Star icing Tip – you can also use a grass tip and it works great
- Marshmallows
- Pink Sparking Sugar
- Mini Jelly Beans
Directions
Bake up your cupcakes and allow time for them to cool. While your cupcakes are cooling cut your marshmallows diagonally to create ears.
Dip the ears in the pink sparking sugar.
Frost your cupcakes. I used a star for my icing however you can also use a grass tip or skip it all together and frost them with a knife and roll them in coconut flakes to mimic the bunny fur.
Once your cupcake is frosted attach your bunny ears on top and add a mini jellybean for the nose.
