    Simple Strawberry Tart Recipe

    Our growing season is a bit different in Miami than it is around the rest of the country. We just wrapped up Strawberry Season, which runs from December to May, and I had a few  pints of delicious, ripe berries sitting in the fridge.

    Now, Angeline and I usually just eat bowls full of fresh strawberries by themselves, but I wanted to come up with a fun recipe for this post...so I got a little adventurous and made a Simple Strawberry Tart recipe! Yum, right?

    Why We love this Simple Strawberry Tart Recipe

    Now, I am not usually one for making pies and tarts, and my first attempt at a strawberry pie was...well, let's just say it was a total fail and I ended up just scraping the berries off the crust and eating them on top of yogurt so that they didn't go to waste!

    I found this really easy Strawberry Tart recipe by Martha Stewart and used it for my Simple Strawberry Tart. Martha may be known as being catty towards bloggers, but I still love her recipes - this one, at least! ha!

    How to make this Simple Strawberry Tart Recipe

    Ingredients needed to make this Simple Strawberry Tart Recipe

    • 1 prepared pie crust (I used a refrigerated pie crust, cuz ain't no one got time for that...if you DO have time for that, this is a great recipe for a homemade pie crust)
    • 1 8 ounce package cream cheese, softened
    • ¼ cup granulated sugar
    • ½ teaspoon pure vanilla extract
    • 1 ½ to 2 pounds strawberries, hulled and sliced
    • ¼ cup grape jelly

    Directions for how to make this Simple Strawberry Tart Recipe

    Preheat your oven to 350 degrees and place your pie crust dough to a 9-inch round tart pan with a removable bottom. The removable bottom is key because it makes it so much easier to take the tart out of the pan!

    Lay the pie crust dough over the tart pan and press it down into the form, making sure that you press the sides up alongside the pan. You want that pretty crinkle on your tart crust, it's half the fun! Use a fork to prick little holes all over the bottom of the pie crust and bake for 20 minutes at 350 degrees.

    Using an electric mixer, beat together the cream cheese, sugar and vanilla until light and fluffy. Pour into the tart pan, spreading evenly. Layer the strawberry slices all over the cream cheese filling.

    Heat the grape jelly over medium heat until liquefied, then pour over the top of the berries. Refrigerate for about two hours so that the jelly completely sets over the berries.
