For the sweet potato puree, I ended up buying sweet potatoes in a can and mashed them until I had 1 cup. The can was large, 29 oz, and I used about half the can. The can said Yams - Cut Sweet Potatoes in Syrup. I drained the syrup and mashed the potatoes and used them in this recipe.
You can certainly bake a sweet potato (or probably 2), scoop out the insides and mash for this recipe. Or peel and cube and boil like a normal potato for mashed potatoes, drain and mash.
