Summertime may be winding down, but here in South Florida, it’s warm all year round…and the heat isn’t going to give in anytime soon! Last week it was 104 degrees when I got into my car! Seriously, mother nature…how’s about you give Miami a rest? We are knee-deep in BBQ season and I am racking my brain with ideas for side dishes to bring to my friend’s little backyard gatherings. Of course corn on the cob and baked beans always go well with BBQ, but sometimes a girl just wants to bring a cold, refreshing dish to lighten things up! This Apple Walnut Salad Recipe is just perfect for such an occasion!

Apple Walnut Salad Recipe

Our Apple Walnut Salad Recipe is crunchy and a bit tart with the granny smith apples, but then there’s a little sweet from the maple syrup. It’s realy more tart than sweet, so expect a burst of crisp freshness on your tongue!

You can make ahead since you coat the mix with lemon juice, the apples won’t brown.

Apple Walnut Salad Recipe

Ingredients:

  • 2 large granny smith apples, cored and sliced thin
  • 2 cups shredded coleslaw mix
  • 1/4 cup lemon juice
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 2 teaspoons honey mustard
  • 1/2 teaspoon black pepper
  • 1/2 cup raisins
  • 1/2 cup walnuts

Directions:

Mix together apples and coleslaw mix.

In a small bowl, add lemon juice, maple syrup, oil, mustard and pepper. Mix well and pour over apple mix. Stir well to coat evenly. Let set for 30 minutes before topping with raisins and walnuts and serving.

Refrigerate leftovers.
