One of my favorite dishes to make when my family is coming over is a Velveeta Cheesy Broccoli Chicken Casserole With Rice Recipe; it takes under 30 minutes to make and is so full of flavor!

There's really nothing quite like the creamy taste of Velveeta block cheese in a casserole, am I right?

Velveeta Cheesy Broccoli & Chicken Casserole With Rice Recipe

This Velveeta Cheesy Broccoli & Chicken Casserole With Rice Recipe is the perfect recipe to make when you want to spend time with the family - because you won't be slaving over the stove all evening!

So many of my favorite recipes include the liquid gold of Velveeta, but I think this one is really my favorite. Whenever I make it, I think of family dinners, conversation and happiness. I think I've made it for our family's annual progressive Christmas dinner twice now, that's how much everyone loves it - especially the little ones!

Velveeta asked me if I knew any Liquid Gold Diggers. I'll know more soon once they taste these dishes! Why? Because Liquid Gold Diggers love the Liquid Gold of Velveeta.

May be a dumb question, but is the chicken cooked first before adding to recipe?

    19. Jennifer Quillen says

Oh my goodness! I should add that to the instructions! Yes, it has to be cooked first 🙂

Is the rice supposed to be cooked first before mixing it in?

    21. Lu says

Do you use Minute Rice or regular rice?

    22. Jennifer Quillen says

      October 21, 2013 at 2:07 pm

You can use either! If you use Minute Rice, it will just cook a little more soft then regular rice.

Well, I.m trying the recipe now. It was a surprise when I checked on it, with 3 minutes left, and the rice had not even begun to cook. Maybe you should fix the recipe so that it calls for cooked rice.

MAKE SURE TO COOK RICE BEFORE MIXING IT IN!
This was not stated in the recipe. I mixed it all in (uncooked rice) and cooked for 20 minutes and the rice was still hard. This recipe was a waste of my time & food 🙁

    26. Jennifer says

      April 16, 2025 at 9:59 am

It sounds like you did not use the Minute Rice that this recipe calls for.

    27. Jennifer says

      April 17, 2025 at 5:41 pm

Yes! The black pepper brings out the taste!
