Directions for making this Tortellini and Sausage Soup Recipe
Heat the olive oil in a large saucepan or Dutch oven on medium high heat. Add in the chopped onions and sauté until tender and translucent (about 10 minutes).
Add in the smoked sausage and carrots and continue to sauté about 5-10 minutes.
Pour in the beef broth, if it seems to boil down, you can always add more.
Add in the canned tomatoes, dried parsley and bay leaves. Cover and simmer 15 minutes.
Add in the package of store bought cheese tortellini and the chopped spinach. Cover and continue to simmer until the tortellini is heated through and tender (about 5-10 minutes).
Remove the bay leaves prior to serving this best sausage tortellini soup recipe!

- 2 C. spinach chopped
- 1 C. carrots sliced
- 14.5 oz can of diced tomatoes
- 1 medium onion diced
- 2 tsp. dried parsley
- 2-3 bay leaves
- 5 C. beef broth
