This Sweet Pepper Sausage Italian One Pot Meal Recipe was really good. It was even tasty the next day as a left over.
Why haven't I made more one pot meals before now? One pot meals are just so easy and they free up so much time to do other things!
I'm not sure what to call this! It's clearly an Italian flavor, I used a sweet pepper sausage so maybe a Sweet Pepper Sausage Italian One Pot Meal Recipe!

Sweet Pepper Sausage Italian One Pot Meal Recipe
Ingredients
- ½ cup onion diced
- 2 Tablespoons butter
- Fully Cooked Sausage - Sweet Pepper 12oz sliced in ½" pieces
- 32 oz Chicken Broth 1 box
- 1 can Italian Stewed Tomatoes 14.5 oz
- 1 Tablespoon oregano dried
- 1 Tablespoon basil dried
- 8 oz Rotelle Pasta uncooked
- 1 cup fresh spinach
- Shredded Parmesan cheese
- Salt & Pepper
Instructions

In a dutch oven or heavy saucepan, add onion and butter and sautee until onion is transparent, about 3 minutes.

Add sausage and continue to cook until edges begin to brown. About 3 minutes.

Add chicken broth, stewed tomatoes (with juice), oregano, and basil. Bring to a boil.

Add pasta and continue with a rolling boil. Reduce heat to a slow boil and cover. Cook for 8-12 minutes or until pasta is done. Add salt and pepper to taste.

Add 1 cup spinach and stir until wilted.

Serve with shredded Parmesan cheese.
