As a busy mom, I often find myself struggling to get dinner together at the end of the day. There are times that I am so busy with blogging work, or cleaning the house that by the time 6 pm rolls around, I haven’t even started thinking about what I am going to make! I’ve been a fan of using my Crock Pot – or slow cooker, as some call it – for many years and I am trying to get back into using it more regularly. You can throw this Slow Cooker Orange Chicken Recipe together in a few minutes in the morning before you leave for work, or if you work from home, before you start your day!
It’s so nice not to face that frantic I have to make dinner! moment when you realize that everyone is starving and you haven’t even begun to think about dinner. We do order Chinese or Pizza about once a week, and that’s our little treat and my break from cooking. But I hate resorting to picking up fast food and try to avoid it all all costs. Using a slow cooker takes the guess work out of dinner time and slow cooker meals are usually pretty inexpensive too!
Slow Cooker Orange Chicken Recipe
2 lbs cubed chicken breast
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dry grated orange peel (found in the spice section)
1/4 teaspoon black pepper
Cook with lid on, on high heat for 3 hours.
After 3 hours of cooking, stir in the following ingredients:
- 1 cup orange marmalade
- 1/2 cup BBQ sauce
- 3 tablespoons teriyaki sauce
- 3 green onions chopped
- pinch of red pepper flakes (optional)
Cover with lid again, cook over medium heat an additional 30 mins.
