Simple Summer Berry Cobbler Recipe

One of my favorite things about summer is that somehow, magically, my family wants to load up on the fruits, veggies and grilled food during the summer months!
Maybe it's all that summertime heat that makes them enjoy fresh fruits and veggies more - all I know is that I'm grateful!
I love making fresh fruit salads, pies and cobblers during the summer. Pies and cobblers just scream "backyard bbq," don't they?
The problem with cobblers and pies is that they usually have a ton of sugar in them. Fruit is sweet enough, why do all of those recipes call for so much added sugar?
Fruit is nature's candy!
A great way to alter those time-honored summertime recipes is by substituting SPLENDA® Sugar Blend for the sugar. Just make sure to check the conversion chart on the back of the SPLENDA® Sweeteners package, as it doesn't always convert cup for cup.
In this Simple Summer Berry Cobbler recipe, I replaced the 1 ½ cups of regular sugar with just ¾ cup of SPLENDA® Sugar Blend.
I really liked the way it turned out, it was still a sweet cobbler, but I felt better knowing that I wasn't adding on a ton of sugar.
Oh wait, I think it's missing something...
Maybe a little sugar-free or no-added sugar whipped topping?

Simple Summer Berry Cobbler Recipe
Ingredients
- 3 cups fresh blueberries
- 1 tablespoon lemon juice
- ¾ cup SPLENDA® Sugar Blend divided
- ½ cup butter cubed
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup milk
- 1 egg lightly beaten
Instructions
In a small pan, add the berries, lemon juice and ½ cup of sugar. Bring mixture to a boil and then set aside. Place butter in a baking dish and melt in the microwave for one minute.
Combine the remaining sugar with flour, baking powder, salt, milk and egg in a large bowl. Mix well, then pour over your melted butter.
DO NOT STIR!
Spoon your berry mixture over the batter - again, DO NOT STIR!
Bake at 350° for 40-45 minutes or until golden brown. When serving, flip the serving over so that the crust is on top!
