I am normally not one to choose balsamic vinegar when eating a salad UNLESS there is something sweet to offset the tangy flavor of the balsamic vinegar. Did you know that balsamic vinegar offers tremendous health benefits? It reduces blood sugar, lowers cholesterol, helps to lose weight, reduces hypertension, relieves congestion, helps improve your skin and even fights cancer! I can go on and on, but these are just some of the beneficial factors.
Pineapple also has many benefits! It is great for eye health, supports the immune system, supports bone strength, aids in digestion and much more. I think it's safe to say this dish is a real powerhouse!
This is an amazing recipe to make while on a budget, but you want to impress someone special (your significant other or even that potential client) without spending a fortune. You want to give them a meal that has it all.
It has to look good on the plate, deliver that mouth watering aroma and awaken the taste buds. Personally, I like to serve it with a light salad or rice pilaf. I don't want to "take away" from the dish, just simply compliment it.

After very little preparation time, I couldn't wait to dig in (I cheated and had a few pineapple chunks before cooking this I couldn't resist). The pork was so tender and the red onion caramelized so well with the balsamic vinegar and pineapple. I could taste just enough of the cinnamon with each bite of pineapple, giving it that sweetness that I love so much. The preserves brought it all together, offering a balance of all the flavors combined.
By far I believe this is one of my FAVORITE pork recipes! It was super easy to make and I only spent about $15 making it. With the spinach salad as a side, total spent was no more than $20 and it served 4 people. So for $5 per serving, we had a well balanced meal that was absolutely divine. Also what I love about this recipe is that you can eat it on a hot summer day or a cold winter night...there are no rules! The sliced almonds gave it that perfect ending. It added just enough crunch and texture yet was not overpowering.
I wanted to share this with you and bring you a small taste of Hawaii to your table, after all it is one of the biggest destinations for many! I enjoyed a chilled glass of chardonnay to compliment the meal (okay I actually had two) and I couldn't imagine a more perfect meal. How to Make This Pineapple Balsamic Pork Chops Recipe
Pineapple Balsamic Pork Chops Recipe Ingredients:
- 1 teaspoon oil
- ½ red onion, chopped
- 4 pork chops
- salt and pepper
- 1 cup pineapple preserves
- 1 can, 8 oz, pineapple chunks
- 1 tablespoon balsamic vinegar
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup sliced almonds
Pineapple Balsamic Pork Chops Recipe Directions:
In a large skillet, add pork and season with salt and pepper. Cook on both sides, about 4-6 minutes until cooked through. Remove from pan and keep warm.
In the same skillet, add oil and onion and saute for 2 minutes.
Add pineapple preserves, pineapple chunks, vinegar, cinnamon, salt, and pepper and heat on medium high for 3-5 minutes until warm.
Serve over pork chops.

Instructions
