After spending a week running around Colorado like a chicken with my head cut off in order to see everything that I wanted to see while there, I was pooped! So, two nights with girlfriends at the Omni Interlocken Resort in Denver, Colorado was the perfect way to end my time in Colorado.
With 390 deluxe guest rooms and suites – like this incredible room I stayed in below – I was impressed not only at the size of the Omni Interlocken Resort, but by the mix of rustic and classic elegance throughout the hotel.
I seriously fell in love with my room the minute I walked in. King sized bed, work station, flat screen television, comfy chair and ottoman to relax after a week exploring the city…
We found delicious fruit and cheese and cracker trays in our rooms – along with a few bottles of wine – when we checked in.
The sense of hospitality at the Omni Interlocken Resort certainly wasn’t lost on this gal. It was a long, busy week, full of appointments, sight-seeing, bar hopping and conference meetings and I definitely needed a glass of wine.
Or three.
After we settled into our rooms and relaxed for a bit, we realized something.
We didn’t need to leave the Omni at all – there was a fabulous restaurant downstairs, the Tap Room and Terrace Restaurant and Bar, with classic pub fare and fun games like pool and shuffleboard to entertain ourselves with while we waited for our meals.
I was a bit worn out from being on the road all day, so I had a light salad for dinner and treated myself to a rich and decadent dessert – a bread pudding!
Let me tell you, that bread pudding was amazing! My friends had “real” dinners and they both raved about theirs as well.
To say that I was ready for bed immediately after dinner would be the understatement of the year. I sat on my balcony and caught up on some work before I went to bed for the evening, while enjoying the beautiful view of Broomfield from my balcony. I just loved the way the sun was setting over the Rocky Mountains in the horizon!
In addition to the Tap Room Bar and Restaurant, the Omni Interlocken in Denver also has the Meritage Restaurant, which won the Open Table award this year, Fairways, as well as the Internet Morsels Cafe. And of course, there is the spectacular in-room dining service and poolside service.
We had a lovely breakfast at the Meritage Restaurant, and I actually went home and recreated the recipe with my own little touches. I want to give a special thank you to the chef for sending me the recipe!

Speaking of poolside…the Omni Interlocken Resort has not one, but two pools! There is also a little jacuzzi, though I never made it down there to try it out! I loved that the Omni Interlocken Resort also had a little bar area by their pools, and they had a selection of sunscreen there as well, so that guests didn’t have to run out to the store if they forgot their sun protection.
And let me tell you: you NEED sun protection in Denver. I got a sunburn one day while having lunch downtown. You would have thought I’d spent the day at the beach back home in Miami!
While taking a tour of the Omni Interlocken Resort, I realized just how all-inclusive the resort really was. I can imagine that we could spend an entire week there for a vacation – and many Colorado residents do take a staycation there quite often!
Aside from the lovely rooms, the variety of restaurants, the incredible pool area and the lounge area, there is also a fantastic fitness center…and A SPA.
