Pot pie is a wonderful way to reuse cooked meat. You basically cook meat, vegetables, and gravy in a pie crust.
This turkey pot pie is made with biscuit dough and small enough for them to be individually portioned. They almost remind me of Turkey hot pockets.

Now, while you can definitely serve it up with some veggies on the side, I happen to like it just as it is...this is the ultimate carbohydrate heaven!

How To Make Turkey Biscuits
Use these turkey biscuits as your weekly meal prep, or eat them for lunch or dinner. Below are the instructions and all the information you need to make them.
Ingredients
All the exact amounts are in the printable recipe card at the bottom of the post. First, here is what you'll ned from the store.
- 1 tube large biscuits (8 count)
- leftover cooked turkey
- cooked stuffing
- gravy, heated and ready to serve
Directions
Here's a quick overview of the recipe.
First, preheat your oven to 375. Then, line a baking sheet with parchment paper and flatten biscuits until they are roughly double in size.
Place a small amount of your turkey and stuffing on half of each biscuit round. Fold the biscuit in half and use a fork to press the seams together. Press it firmly so that they don't open during the baking process.
Bake them for about 12 minutes, or until they are golden brown.
Serve these delicious little homemade leftover turkey hot pockets drizzled with warm gravy and a side of leftover veggies for a full meal, or serve them alone for a handheld snack!
Storage
Store your cooked turkey pot pie biscuits in an airtight food storage container in the refrigerator for up to three days.
You can freeze them too. Wrap them up individually and store them in the freezer for up to six months.
