    Sometimes you just want comfort food. Down home, creamy, rich, fattening comfort food. Whether it's a gloomy, rainy day, or you're just feeling down in the dumps, or you're coming off a really strict diet and want to make the very most of your cheat day, it's comfort food to the rescue!

    You know what I am talking about, the kind that fills your stomach, fills your soul, and sticks to your ribs for days...like this Homemade Shells & Cheese Mug Recipe.

    One of my favorite comfort foods is pasta, and you can't get any more comforting that macaroni and cheese! Of course we can reach for that famous orange boxed mix, or spend an hour over the hot stove, stirring cheeses and milk and cream...or you can take the quick and easy way out and just make a simple one-serving dish. I personally like the idea of not having any leftovers to tempt me to continue eating them the next day!

    Homemade Shells & Cheese Mug Recipe

    Ingredients

    • ⅓ C. mini shells
    • ½ C. water
    • ½ C. shredded cheddar cheese finely shredded or block cheese you shred yourself works best
    • 1 tbs. butter
    • 2 tbs. milk
    • ½ tsp. olive oil
    • salt & pepper to taste

    Instructions

    1. Add the mini shells to your mug along with the water and olive oil (prevents the shells from sticking together).
    2. Heat the mug in the microwave for 2 minutes. Stir.
    3. Repeat step two (2) more times, stirring after each round. Be careful in handling, as the mug will get very hot.
    4. Add the butter, milk, shredded cheddar cheese to the mug, stirring to mix all the ingredients together.
    5. Let cool a few minutes, add salt & pepper to taste if you wish and enjoy.
