I freaking love brownies. I quit eating sugar about 10 years ago, but um...BROWNIES? Hello! I can't resist...and this Fudgy Flourless Brownies Recipe is no exception to that rule! I just LOVE Brownies! Talk about chocolate overload, what's not to love about them? This Fudgy Flourless Brownie recipe is so delicious and is healthier than most brownies. In this recipe we will NOT be using any flour, so go ahead and say goodbye to all those extra carbs we don't want or need. You will also be using coconut oil which is a much healthier version than regular vegetable oil most recipes call for. And it tastes better than regular cooking oil as well. This recipe is so unique in so many ways. It even has instant ground coffee in it. Wait, does that mean I can have this for breakfast?

This recipe was actually shared by a friend of mine who helps by fundraising for non profit organizations in our community. They have a monthly bake sale to raise proceeds and she wraps the brownies in cellophane individually and prints out the ingredients to attach to each one (just in case someone may be allergic). She told me they are always a best seller at their monthly bake sales and some come just to buy the brownies! Let's just say that I felt pretty confident that I would like these brownies as well. It's very inexpensive to make and between prep time and baking time I dedicated no more than 45 minutes.
I decided to make these for my daughter Angeline to take with her to work for an early lunchtime meeting. She was so indecisive about what to bring to the meeting the next day, and she was already kind of stressed. She mentioned some coworkers said they were going to bring coffee, bagels, fruit and such. Since she works with many girls I figured these would these brownies would hit the spot. They were super fudgy and actually held together really well while eating them ( yes I had to try one myself). They were still smooth and rich but they weren't falling apart as some brownies tend to do. I surprised Angeline early the next morning before she had gotten the chance to make or buy something before work. I could literally see the relief in her eyes, Mom saved the day! It made me feel really good inside when I received her texts later that day, he boss and co workers loved the brownies and it made the meeting a bit more happier for all. After all, who doesn't like chocolate? These brownies are the perfect comfort food, meetings and more. What Makes This Fudgy Flourless Brownies Recipe So Special?

Fudgy Flourless Brownies Recipe
Ingredients
- 6 Tbsp. coconut oil
- 8 oz semisweet chocolate chips
- 1 teaspoon instant, ground coffee
- ⅔ cup granulated sugar
- 2 eggs, room temperature
- 1 tsp. vanilla extract
- ¼ cup unsweetened cocoa powder
- 3 tbsp. cornstarch
- ½ tsp. salt
Directions
Preheat oven to 350 degrees.
Line an 8x8 baking pan with parchment paper, allowing some to hang over the sides.
Spray with non-stick cooking spray. (it won't lay down completely until you pour in the batter)
In a small sauce pan, heat the coconut oil, cocoa, chocolate and coffee over low heat. Stir until melted and smooth. Set aside to cool.
In a separate bowl, using a hand mixer, beat the eggs, sugar and vanilla for 2 minutes, or until smooth and light in color. Add the melted chocolate to the egg mixture and mix until smooth. Add the cornstarch and mix again until completely smooth and thickened.
Pour the batter in the prepared pan and spread it as evenly as possible.
Bake for 25-30 minutes or until the center is just set. Do not over bake. Cool for at least an hour before cutting into squares. Makes approximately 12 brownies.
