    Blueberry Mojito Mocktail

    Labor Day is coming, and it's time for a little end-of-summer fun in the sun as a last "hoorah" before the colder weather hits. Celebrate with this amazingly refreshing Blueberry Mojito Mocktail!

    Sure, the colder weather doesn't really strike us here in Miami, but the long Labor Day weekend sure is a fantastic time to celebrate (whether it really feels like the "end" of summer here or not)!

    I decided to come up with a mocktail (that could easily be turned into a cocktail for those who enjoy a good cocktail) that's a fun take on a popular drink nowadays - the Mojito.

    I loooove me some mint. I'm also a gigantic blueberry fan. Pairing the two together, all the yeses! Of course, I wanted to make it without adding sugar, so I created it using a simple syrup with Splendaยฎ No Calorie Sweetener.

    How to make a Blueberry Mojito Mocktail

    Ingredients you will need to make a Blueberry Mojito Mocktail

    • 6-8 mint leaves
    • ยพ cup blueberries slightly muddled
    • 2 ounces of lime juice
    • 2 ounces of simple syrup made with Splendaยฎ
    • Splash of club soda

    Low Calorie Simple Syrup

    • 2 cups water
    • ยฝ cup Splendaยฎ No Calorie Sweetener
    • ยฝ cup Splendaยฎ Sugar Blend
    • โ…› tsp. vanilla extract

    How to make a Low Calorie simple syrup

    Blend all ingredients in a medium sized sauce pot. Bring to a simmer then refrigerate.

    Instructions for how to make Blueberry Mojito Mocktail

    Muddle everything together in a cocktail shaker, then pour over ice and serve!

    This Blueberry Mojito Mocktail is fun and easy to create, you could even create a mocktail station, filled with fresh mint, blueberries, other fruits (say, strawberries and raspberries, perhaps?), along with a variety of other fun ingredients your guests could swap in.

    Tips for Cooking & Baking with SPLENDAยฎ Sweetener Products

    You can use SPLENDAยฎ Sweetener Products for all kinds of cooking and baking, but especially when used to sweeten in recipes. Just make sure to follow the conversion instructions, as it does not always convert cup-for-cup for sugar. It works really well with citrus to enhance the flavors and does a great job in baked goods like cookies and cakes!

    Ingredients
      

    • 6-8 mint leaves

    • For the simple syrup, blend all of those ingredients in a medium sized sauce pot. Bring to a simmer and them remove from heat, allow it cool and then refrigerate.
    • Muddle everything together in a cocktail shaker, then pour over ice and serve!
