Who needs to go out to eat breakfast on Valentine's Day when you can stay home and make this super easy Black Raspberry Pancakes Recipe in your own kitchen?
We made these beautiful, deep pink, fruity pancakes for my blog today and I am so excited to share them with you!
I love fresh fruit on my pancakes, so I went bananas over the idea of having the fruit actually inside the pancakes themselves!
Perfect for Valentine's Day: Black Raspberry Pancakes Recipe
Ingredients:
2 cups pancake mix of your choice (cross check their instructions to ensure the amounts are within the same range, make adjustments as needed for liquid and eggs).
1 cup buttermilk
½ cup fresh black raspberry juice
1 egg
1 container of blackberries (for the ½ cup of juice) and garnish
Optional: a dash of purple food coloring to deepen the color, we used ¼ of a teaspoon of a dry/powdered food coloring.
Directions:
Before mixing the batter together thoroughly wash the blackberries. Using about half of the container, mash, muddle, blend or juice the berries. Then use a fine mesh strainer to remove the flesh, seeds and pits of the berries.
Prepare the pancake batter as directed, adding in the blackberry juice (and dash of food coloring if you should choose).
Cook the pancakes on a clean skillet as you normally would-we turned the heat down just a tad to slow cooking time and reduce the golden brown look that pancakes usually have.
Tip: For similar sized pancakes try an ice cream scooper.
Stack up your Black Raspberry Pancakes and then top them with fresh black berries!
