This Baked Overnight Oatmeal Bars Recipe is one of my FAVORITE dishes to make for breakfast and brunch, as it adds a sweetness to your table without all the messy syrup and butter that french toast or pancakes require. Oh, and not to mention trying to make enough pancakes or waffles and actually keeping them hot for the guests! Have you ever noticed how no one can eat a hot meal at the very same time when you are trying to serve pancakes and waffles? I find that by the time enough is made for the entire crew, the pancakes aren’t even warm enough to melt that pretty little slab of butter! This way is so much easier!

I always make this in my pampered chef stone so it stays warm. One of the really nice things about this is that all of the prep work is done the night before! All you have to do it pop it into the oven the morning of, so it is super easy!

It’s also great for us single gals who need a quick and easy breakfast that we can prepare in advance and just grab each morning before the daily rush begins. Who needs a granola bar or boring old yogurt when you can have this tasty breakfast before heading to work? As much as I love yogurt, sometimes you want something a little more filling, a little more decadent…and this is perfect for those times! It’s great to pile high with fresh berries as you sit down to work in your home office, or you can meal-prep and package up a week’s worth of oatmeal squares to grab and go if you work outside of the home. 

Of course, it’s also great for those Sunday mornings before church, as the entire family can sit down to eat a hearty, healthy breakfast without a ton of fuss. If you have lots of time, scramble up some eggs and cook some bacon to go along with this yummy Baked Overnight Oatmeal Bars Recipe. 

Baked Overnight Oatmeal Bars Recipe

Baked Overnight Oatmeal Bars Recipe

Ingredients:

  • 3 cups quick cooking oats
  • 1 tablespoon baking powder
  • 1/2 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup butter, melted
  • 1/2 cup apple sauce

additional toppings and mix ins: top with sliced almonds and strawberries, blackberries OR you can mix in almonds, pecans, dried cranberries, dried cherries, raisins. I make mine plain because that’s what the kids will eat and pile toppings on my own serving!


Directions:

Lightly grease a 9×9 baking pan (yes, I still spray some nonstick cooking spray on my stoneware).

In a large bowl, combine all ingredients and mix well. Pour the mixture into your prepared pan, cover it up with plastic wrap and refrigerate it overnight. 

The next morning, remove the cover and preheat your oven to 350. Bake 30 minutes or until set and almost cake like. Let set for about five minutes before serving. 

This Baked Overnight Oatmeal Bars Recipe in a 9×9 pan makes about 9 servings. BUT the beauty of this recipe is that you can EASILY double it for a 9×13 pan! In that case, you’ll bake 40-45 minutes.

This 9x9 pan makes about 9 servings. BUT the beauty of this recipe is that you can EASILY double it for a 9x13 pan! In that case, you'll bake 40-45 minutes.

Ingredients
