Baked Oatmeal Bars Recipe

These Baked Oatmeal Bars are one of my favorite sweet breakfast recipes to make for breakfast and brunch! They add a sweetness to your breakfast table without the messy syrup and butter that French toast or pancakes require.

Ingredients

  • 3 cups quick cooking oats
  • 1 tablespoon baking powder
  • ½ cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup butter melted
  • ½ cup apple sauce

Instructions

  • Lightly grease a 9x9 baking pan (yes, I still spray some nonstick cooking spray on my stoneware).In a large bowl, combine all ingredients and mix well.
  • Pour into prepared pan, cover and refrigerate overnight. The next morning, remove cover and preheat oven to 350.
  • Bake 30 minutes or until set and almost cake like. Let set for about five minutes before serving.

Notes

additional toppings and mix ins: top with sliced almonds and strawberries, blackberries OR you can mix in almonds, pecans, dried cranberries, dried cherries, raisins. I make mine plain because that's what the kids will eat and pile toppings on my own serving!
