    Ingredients you will need to make our Almond Milk Rice Pudding

    Everything you need for this recipe is either in your kitchen right now or a quick trip to the grocery store away. This recipe only uses simple ingredients to deliver all that flavor.

    • 2-¼ cups Almond milk (you can use any kind of milk, but I do not drink regular cow's milk, so I always have almond milk in the fridge!)
    • ½ cup White rice (NOT instant)
    • ⅓ cup White granulated sugar
    • ¼ teaspoon Salt
    • 1 teaspoon Pure Vanilla extract
    • ½ teaspoon Ground cinnamon
    • Chopped almonds for garnish (optional)
    • Cinnamon sticks for garnish (optional)

    Making this Almond Milk Rice Pudding is so easy that even beginners can do it! It only takes a few simple steps, and you'll have homemade rice pudding.

    1: Cook the rice, sugar, and almond milk until the rice sakes up the liquid.

    Substitutions and Variations

    • You can use any white rice for this recipe as long as it isn't instant.
    • If you're not lactose intolerant, you can use regular milk.

    Storage

    Refrigerator: Store for up to 4 days in an air-tight container.

    Freezer: Store in an air-tight, freezer-safe container or heavy-duty freezer bag with 1 inch of head space for up to 3 months.

    Reheat: For hot rice pudding, spray a baking sheet with nonstick spray. Then spread the rice pudding out in a layer. Pour a few tablespoons of milk over it and bake at 350 for 5 to 10 minutes.

    What to Serve with Rice Pudding

    Rice pudding is fantastic all on its own. If you want to dress it up, you can garnish it with some almonds, cinnamon sticks, or a dollop of whipped cream. You can also serve it with fresh fruit.

    Tips

    • The Almond Milk Rice Pudding is done with almost all the liquid has been absorbed, but it's not dry.

    Ingredients
      

    • 2-¼ cups whole milk
    • ½ cup white rice not instant
    • ⅓ cup white sugar
    • ¼ teaspoon salt
    • 1 teaspoon vanilla extract
    • ½ teaspoon ground cinnamon
    • chopped almonds optional for garnish
    • cinnamon sticks for garnish optional

    Instructions
     

    • Add rice, sugar and milk in a saucepan and mix well. heat over medium high heat until mixture begins to boil. Reduce heat to low and cover. Cook for 25-30 minutes or until rice is tender has soaked up liquid.
    • Remove from heat and stir in vanilla and cinnamon. Let set, covered, to cool.
    • Serve cold or warm/room temperature with chopped almonds and a cinnamon stick if desired.
    • Serves 4-6.
