I love chocolate covered berries, but I think you'll agree that this Strawberry Chocolate Bark Recipe is equally awesome! After going crazy on the Valentine's Day crafts and recipes over the last month, I thought I'd share just one more Valentine's Day inspired recipe with you all!

Why we love this Strawberry Chocolate Bark Recipe
The good people at Driscoll's Berries sent me a few coupons to buy some of their delicious berries, and I came up with this super easy and delicious take on the classic chocolate bark...Of course you can skip the coconut if you prefer, but I absolutely love coconut!

How to make Strawberry Chocolate Bark
Ingredients needed to make Strawberry Chocolate Bark Recipe:
1 container of strawberries
1 cup raw, whole flake coconut
12 ounces of quality dark or milk chocolate (we used milk)
Carefully wash and completely dry the strawberries.
Use a sharp knife to cut the strawberries into pieces roughly the size of a nickel.
Lay the strawberry pieces cut side down on a paper towel for about 10 minutes; this will absorb some of the juices and moisture in the berries.
Prepare a baking sheet with parchment paper.
Follow the package instructions for melting the chocolate; we opted for the microwave method which was perfectly fool proof.
When the berries have had enough time to rest and the chocolate is ready, pour it out onto the parchment paper.
We then swirled it into a circle while evening out the thickness.
Place the strawberries one at a time cut side down into the chocolate.
Dust the top with the raw coconut, pressing the larger pieces into the chocolate just a bit.
Chill in the refrigerator until solid then cut into chunks with a sharp knife.
I found that just placing the tip of the knife into the hard chocolate in different places would cause it to splinter and break on its own in most spots.
Keep chilled until ready to serve.
This Strawberry Chocolate Bark with Coconut Flakes is best when enjoyed within a few hours of making.

We tend to buy a lot of Driscoll's Berries, as Angeline and I eat a lot of strawberries and raspberries on a regular basis. You can do so many things with fresh berries, besides just eating them plain!
