Add sausage to a skillet and cook over medium heat, stirring frequently until browned. If desired, drain grease. Reduce heat to low and add cream cheese to the skillet. Continue to cook, mixing constantly until cheese is melted. Stir in tomatoes. Remove from. heat.
Place wax paper onto two baking sheets and unroll one crescent roll sheet onto each paper. Spoon half of the sausage mixture onto one crescent roll and half onto the other, keeping it about ½" from the short end and long edges.
Roll up the crescent roll, using the wax paper as an aid if desired. Remove the paper and place onto a baking sheet or cutting board. Repeat with the other crescent roll sheet and place rolls into the freezer for 1 hour.
When ready to bake, preheat oven to 400. Remove dough from the freezer - dough should not be frozen solid, but firmer so it's easier to handle. Slice into 1" pieces (you'll get about 8 pieces out of each log) and place cut side down onto a baking sheet lined with parchment paper.
Bake for 15-18 minutes or until bottom is golden brown. Remove from oven and let stand for five minutes before serving warm.
