Smoked Sausage Quinoa, Sun dried Tomato & Spinach

Ingredients

  • 1 cup quinoa rinsed & drained
  • 2 cup chicken broth
  • 16 oz smoked sausage
  • 2 cups fresh spinach sliced
  • ½ cup sun dried tomatoes
  • 1 tbs minced garlic
  • 1 bunch of green onion diced
  • 2 tbs. olive oil
  • salt & pepper to taste

Instructions

  • Bring the 2 cups of chicken broth to a boil and add in the quinoa. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  • While the quinoa finishes cooking heat the olive oil in a large pan. Add in the garlic, sundried tomato and onion and sautee for for several minutes.
  • Slice the smoked sausage and add it to your pan and heat through.
  • Add in the fresh spinach and allow to wilt, continually stirring the mixture.
  • Lastly, add in the 2 cooked quinoa and add salt and pepper to taste.
