Smoked Sausage Quinoa, Sun dried Tomato & Spinach

- 1 cup quinoa rinsed & drained
- 2 cup chicken broth
- 16 oz smoked sausage
- 2 cups fresh spinach sliced
- ½ cup sun dried tomatoes
- 1 tbs minced garlic
- 1 bunch of green onion diced
- 2 tbs. olive oil
- salt & pepper to taste
Bring the 2 cups of chicken broth to a boil and add in the quinoa. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
While the quinoa finishes cooking heat the olive oil in a large pan. Add in the garlic, sundried tomato and onion and sautee for for several minutes.
Slice the smoked sausage and add it to your pan and heat through.
Add in the fresh spinach and allow to wilt, continually stirring the mixture.
Lastly, add in the 2 cooked quinoa and add salt and pepper to taste.
