12ozraw shrimp12 oz, jumbo raw shrimp (deveined, shell and tail on)
1cupmixed vegetablespeas, corn and carrots
1tablespoongarlicminced
2eggsbeaten
3cupswhite ricecooked and cooled
3-4tablespoonssoy sauce
2green onionssliced
ground black pepper
Instructions
Add olive and sesame oil to a large skillet and heat until hot. Add shrimp, in a single layer, and cook, about 4-5 minutes, flipping halfway through cooking until shrimp is pink. Remove shrimp from pan and set aside, keeping warm.
In the same skillet, add vegetables and garlic and cook for 2 minutes. Push vegetables to the edge the pan and pour the eggs into the center. Cook for 2-3 minutes, scrambling eggs. Stir well. Add rice and soy sauce and mix well until heated through.
Serve fried rice topped with shrimp and chopped green onions. Season with pepper if desired.
