Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons sesame oil
  • 12 oz raw shrimp 12 oz, jumbo raw shrimp (deveined, shell and tail on)
  • 1 cup mixed vegetables peas, corn and carrots
  • 1 tablespoon garlic minced
  • 2 eggs beaten
  • 3 cups white rice cooked and cooled
  • 3-4 tablespoons soy sauce
  • 2 green onions sliced
  • ground black pepper

Instructions

  • Add olive and sesame oil to a large skillet and heat until hot. Add shrimp, in a single layer, and cook, about 4-5 minutes, flipping halfway through cooking until shrimp is pink. Remove shrimp from pan and set aside, keeping warm.
  • In the same skillet, add vegetables and garlic and cook for 2 minutes. Push vegetables to the edge the pan and pour the eggs into the center. Cook for 2-3 minutes, scrambling eggs. Stir well. Add rice and soy sauce and mix well until heated through.
  • Serve fried rice topped with shrimp and chopped green onions. Season with pepper if desired.
