Pumpkin and Lamb Chili

Ingredients

  • 1 pound ground lamb
  • 1 red pepper sliced
  • 1 green pepper sliced
  • ½ yellow onion
  • 15 oz diced tomatoes with chilis like rotel
  • 15 oz Pumpkin
  • 30 oz kidney beans
  • 2 tablespoon brown sugar
  • 1 tablespoon chili powder
  • ½ teaspoon paprkia
  • ¼ teaspoon cayenne pepper
  • Optional: salt & pepper to taste

Instructions

  • Using a large pot over medium heat, combine your ground lamb, onions and peppers and cook until the lamb is browned and the onions and peppers begin to soften.
  • Add in your tomatoes, beans, spices and pumpkin and mix well. Cover your pot and reduce heat to low (simmer) and let simmer for about three hours.
