Potatoes and Green Beans

These Potatoes and Green Beans with Bacon are an easy side dish that's perfect for serving at family dinners, or for bringing to a potluck!

Ingredients

  • 6 slices bacon cut into 1" pieces (uncooked)
  • ½ cup white onion chopped
  • 1 tablespoon garlic minced
  • 2 tablespoons butter
  • 1-½ lbs potatoes cut into ½" cubes
  • cup chicken broth
  • 1 lb fresh green beans cut into 2" lengths
  • fresh ground black pepper

Instructions

  • Add bacon to a large skillet and cook over medium high heat until browned and crispy.
  • Remove bacon from pan and let stand to drain on a plate line with paper towels. Set aside.
  • In the same skillet in the bacon grease, add onion and garlic and heat until onion is tender and translucent, about 5 minutes.
  • Add potatoes, butter and broth and heat until boiling.
  • Cover and reduce heat to simmer.
  • Stir occasionally and cook for about 10 minutes.
  • Stir in green beans and cook for an additional 10 minutes, stirring occasionally.
  • Stir in bacon and serve topped with fresh ground black pepper.
