Preheat oven to 400 degrees F.
In small bowl, combine the flour and seasonings.
Give it a quick mix with a fork and set aside.
In another bowl, beat the egg with salt. Set that aside.
In a 3rd small bowl, mix the Panko with the Parmesan cheese. Now, line all 3 bowls up side by side.
Like a quick assembly line, dip the zucchini fries into the flour mixture, then the egg mixture and finally the Panko mixture.
Place on a baking sheet and repeat until all of the zucchini fries are coated and lined up nice and pretty.
Place the baking sheet in the oven on the middle rack.
Bake for 25-30 minutes until golden brown and crispy.
Sprinkle with a smidgen more Parmesan and you're done!
Serve immediately as these can get soggy quick.
