Panko and Parmesan Baked Zucchini Fries Recipe

Ingredients

  • ¼ cup flour or, Italian breadcrumbs
  • 2 eggs
  • 2 cups Panko
  • ½ Cup Parmesan Cheese
  • Salt to taste
  • Pepper to taste
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper optional
  • 1 lb zucchini cut into 4in fry shaped sticks

Instructions

  • Preheat oven to 400 degrees F.
  • In small bowl, combine the flour and seasonings.
  • Give it a quick mix with a fork and set aside.
  • In another bowl, beat the egg with salt.  Set that aside.
  • In a 3rd small bowl, mix the Panko with the Parmesan cheese. Now, line all 3 bowls up side by side.
  • Like a quick assembly line, dip the zucchini fries into the flour mixture, then the egg mixture and finally the Panko mixture.
  • Place on a baking sheet and repeat until all of the zucchini fries are coated and lined up nice and pretty.
  • Place the baking sheet in the oven on the middle rack.
  • Bake for 25-30 minutes until golden brown and crispy.
  • Sprinkle with a smidgen more Parmesan and you're done!
  • Serve immediately as these can get soggy quick.
