Place eggs into a small skillet and scramble well. Cook over medium heat, stirring frequently until nearly cooked.
Place flour tortilla into a large skillet and add eggs on top, sausage and cheese. Heat over medium heat, covered. Once bottom of tortilla is browned and cheese is melted (the lid helps to melt the cheese), flip in half and remove from pan.
Let stand 1 minute before slicing into 4 triangles. Top with chopped fresh cilantro and serve with salsa and sour cream.
