Baked Overnight Oatmeal Bars Recipe

This 9x9 pan makes about 9 servings. BUT the beauty of this recipe is that you can EASILY double it for a 9x13 pan! In that case, you'll bake 40-45 minutes.

Ingredients

  • 3 cups quick cooking oats
  • 1 tablespoon baking powder
  • 1/2 cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup butter melted
  • 1/2 cup apple sauce

Instructions

  1. Lightly grease a 9x9 baking pan (yes, I still spray some nonstick cooking spray on my stoneware).In a large bowl, combine all ingredients and mix well.
  2. Pour into prepared pan, cover and refrigerate overnight. The next morning, remove cover and preheat oven to 350.
  3. Bake 30 minutes or until set and almost cake like. Let set for about five minutes before serving.

Recipe Notes

additional toppings and mix ins: top with sliced almonds and strawberries, blackberries OR you can mix in almonds, pecans, dried cranberries, dried cherries, raisins. I make mine plain because that's what the kids will eat and pile toppings on my own serving!
