Quinoa Pizza Bites

Ingredients

  • 2 C. cooked Quinoa 1 C. quinoa cooked in 1 ¾ cups of water or chicken broth
  • 2 eggs whisked
  • 1 bunch of green onions diced (optional)
  • 1 C. shredded mozzarella cheese
  • 8-10 basil leaves torn into small pieces
  • ½ package of pepperoni cut into small pieces
  • 1 tsp. italian seasoning

Instructions

  • #1. Preheat the oven to 350 degrees and spray a mini muffin tin with non-stick cooking spray. **You could also use a regular muffin tin.
  • #2. Combine all the ingredients mixing well.
  • #3. Use a spoon to scoop the mixture into the muffin tins.
  • #4. Bake 20-25 minutes until golden brown and heated through.
  • #5. Serve with your favorite pizza sauce for dipping.
