Veggie & Turkey Frittata Recipe

Ingredients

  • 2 large brown eggs
  • 1 cup egg whites
  • ½ shredded low-fat mozzarella cheese
  • ¼ cup chopped red and green peppers
  • ½ cup slices white button mushrooms
  • ½ cup of shredded Butterball deli lunchmeat
  • dash of salt and pepper

Instructions

  • Preheat your oven to 300 degrees.
  • In a medium bowl, whisk together the egg whites and two eggs, as well as salt and pepper. Pour over the veggies and then top with the shredded Butterball deli lunch meat.
  • Cover the pan with the lid and remove to the oven and cook for five minutes.
  • Remove from oven and top with shredded mozzarella cheese, then put back into the oven for five minutes.
  • Cut the frittata like you would slices of pie and serve while hot!
