Once upon a time, I was a kid who absolutely loved Valentines Day! My parents always made a really huge deal out of Valentine’s Day for us kids (at least, that’s how it seems 30+ years later). They’d take us to dinner, or to an establishment like Chuck E Cheese, and we’d have an amazing time. All of the goodies at the school parties!
The exchanging of Valentine’s Day cards – it was so much fun! Now I celebrate Valentine's Day by always giving Angeline a certain brand of chocolate and a stuffed animal. I know, she's 21...but she's always going to be my favorite Valentine, regardless of her age! If she were still living at home, I'd serve us this Valentine's Day Cookie Pizza Recipe for a special treat!
Heck, maybe I will make it anyway and just deliver it over to her and her boyfriend as a Valentine's Day gift this year...seeing as how she left the teddy bear I gave her last weekend in her old room. Maybe she's afraid that her dogs will chew it up if she takes it home? Ha ha!

Valentine's Day Cookie Pizza Recipe
I love post all of our Valentine’s Day recipes because they're so festive, and they're all so easy to make! I wan to help y'all find ways to celebrate with delicious treats, even if you're single and just treating yourself! It never hurts to practice a little self-love, you know? I know that Valentine's Day can be a very depressing holiday for many single gals.
It's a time of year when we are fully aware that we don't have a romantic partner in our lives, and it can make people feel really lonely. I went to NYC for my first Valentine's Day after my divorce and spent it with my best friend at the time. Unfortunately, at the last minute, she had a day-long date, so I actually ended up being alone that day.
With the exception of taking Angeline and her boyfriend to the Empire State Building...which was actually a pretty wonderful experience for Angeline and I to share together! I had taken her to NYC once before, but we were only there for a day and only went to see the Statue of Liberty because it was snowing and she was freezing her booty off!
I had a lunch date planned for Valentine's day and it ended up not working out, so I ate lunch alone at Shake Shack. You know what? It wasn't that bad, eating alone on Valentine's Day! But I didn't want a repeat that evening, so I went to my favorite local Italian place, grabbed a lasagna, and went to the local pub to have my dinner.
The bartender had flowers for everyone who came, and it was so nice to sit and have dinner with a bunch of other single women! Sisterhood! My next two Valentine's Days, I actually ended up having a last minute lunch date, and spending the evening with one of my best friends. We called it Galentine's Day!

This year, I am having dinner with a good girlfriend of mine. We are going to have dinner together so that we aren't both left sitting home alone. Another fun way to celebrate Galentine's Day! How to Make this Valentine's Day Cookie Pizza Recipe
Ingredients for making this Valentine's Day Cookie Pizza:
- 1 roll, refrigerated chocolate chip cookie dough
- 1-½ cups mini marshmallows
- Red, White and Pink colored Sixlets
- Valentine Sprinkles
- ½ cup hot fudge

Directions for making this Valentine's Day Cookie Pizza:
Preheat your oven to 350 and grease a 12" pizza pan with nonstick cooking spray. Press the cookie dough into your pan and bake it for 12-15 minutes or until it is light golden brown.
Once it's done, sprinkle the mini marshmallows on top and return to the oven for 2-3 minutes or until the mini marshmallows are puffy.
Remove it from oven and add your candies. Next, heat the hot fudge topping for 30 seconds in the microwave. Stir the hot fudge until it's smooth and drizzle it onto the top of your Valentine's Day Cookie Pizza. Then sprinkle the pizza with the valentine sprinkles.
Allow the Valentine's Day Cookie Pizza to completely cool and slice it into small wedges and serve! Next stop: YUMMY TOWN!
This Valentine's Day Cookie Pizza Recipe serves 12-16, depending on how big you slice the servings. I recommend that you slice them small, as it's a very rich, decadent dessert and you don't need too much to be satisfied!

Ingredients
