    Sweet Potato Shepherd’s Pie Recipe

    What Is Shepherd's Pie?

Also called cottage pie, shepherd's pie is a savory dish that uses ground meat (usually beef or sausage) and topped with mashed potatoes, then baked until the potatoes are crispy on top. Some versions contain diced vegetables too.

There are a lot of different ways to change shepherd's pie - and I made a delicious version with nutrient-rich sweet potatoes.

Why You'll Love This Sweet Potato Shepherd’s Pie Recipe

If you love sweet potatoes and wanted to find more ways to cook sweet potatoes, then this is the perfect skillet recipe for you!

Instead of the traditional mashed potatoes - made with russet baking potatoes - this recipe uses mashed sweet potatoes!

This might be one of my favorite ways to cook mashed sweet potatoes. My other favorite is in sweet potato muffins.

Directions for making gluten-free Shepherd’s Pie

Preheat oven to 350 degrees F. Place sweet potatoes on a baking sheet (faced down) and bake for 30 minutes.

Roasting sweet potatoes on a sheet pan

While potatoes are roasting, prepare vegetables. Peel and slice carrots into bite sized pieces and chop onion.

Diced carrots, onion, and a bowl of green peas on a cutting board with a chef's knife

Heat cast iron skillet over medium-high heat and add ground beef, carrots, onions and peas.

Cooking ground beef in a cast iron skillet with the vegetables

Use a wooden spoon to break up ground beef as it browns and continue cooking for 12-15 minutes.

Once meat is browned and carrots are tender, add tomato paste, water and spices. Stir and then allow mixture to simmer for 5-7 minutes. Add additional water as needed. Taste and adjust spices if necessary.

After sweet potatoes have completed baking, remove from oven and use a spoon to scoop the potato insides from the skins. Place potato into a bowl and smash with a fork until smooth and chunks are removed.

Add olive oil, chili powder and salt to the bowl of sweet potatoes and stir to combine. Remove skillet from heat and then spoon the sweet potato topping onto the meat mixture skillet.

Mashed sweet potatoes on top of ground beef mixture

Smooth it over the top to completely cover. Garnish with fresh parsley if desired. Turn oven to broil on high and place skillet in oven. Remove after 3-5 minutes.

Serve this hardy dinner warm for the best flavor!

    How To Store Shepherd's Pie

How long does shepherd's pie last? If you store cooked shepherd's pie in an airtight conatiner in the refrigerator, it will stay fresh for up to three days.

Can you freeze gluten-free shepherd's pie? Yes, you can! Store frozen sweet potato shepherd's pie in the freezer for up to six months. Let it thaw overnight in the refrigerator before reheating it on the stove.
