    Polenta Sticks with Creamy Gorgonzola Dip Recipe

    Ingredients

    Polenta Sticks

    • 6 cups water
    • 2 cups quick-cooking polenta
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 2 tablespoon melted butter
    • 2 eggs, beaten
    • 2 cups panko breadcrumbs
    • 3 tablespoon olive oil

    Gorgonzola Dip

    • 5 ½ oz Gorgonzola cheese (or another creamy blue cheese)
    • 3.5 oz cream
    • 3.5 oz cream cheese
    • 1 teaspoon freshly ground black pepper
    • 1 tablespoon parsley, coarsely chopped for garnish

    Instructions

    1. Prepare the Polenta
      Preheat your oven to 350°F (175°C). In a large pot, bring 6 cups of water to a boil, then gradually add the polenta, stirring continuously until it thickens—about 1 minute. Once ready, pour the mixture onto a sheet of parchment paper brushed with melted butter, spreading it out into a 7 x 9-inch rectangle about 1 inch thick. Cover with plastic wrap and let it cool completely.
    2. Shape and Bread the Polenta
      Once cooled, cut the polenta into sticks measuring roughly 3 x 1 inches. Beat the eggs in a shallow bowl, and spread the panko breadcrumbs in another. Dip each polenta stick into the beaten egg, then coat thoroughly with panko, ensuring an even crust.
    3. Bake Until Golden
      Arrange the breaded polenta sticks on a baking tray, drizzle with olive oil, and bake for 15 minutes, or until they develop a crisp, golden crust.
    4. Make the Gorgonzola Dip
      Using a hand blender or mixer, blend the Gorgonzola, cream, and cream cheese until smooth. Season with freshly ground pepper to taste, and garnish with chopped parsley for a fresh touch.
