There is something about a picnic that makes it feel like the ideal way to do lunch or dinner on a summer day, or with tasty snacks like this No Bake Blueberry Fruit Crisps!

No Bake Blueberry Crisps in a Jar Recipe

I used to think that picnics were about sandwiches, fruits and salads. You know, the easy go-to picnic foods. But for summertime meals on the go, think beyond the sandwich. Think DESSERT!

Anything that can be served cold or at room temperature has picnic potential. Use a mixture of Thermos, flask, Tupperware and plastic utensils to picnic with just about anything.

Individual jars are another one of my favorite picnic tools. Especially for desserts because they can be eaten right out of the jar, like my No Bake Blueberry Fruit Crisp In a Jar.

I love this recipe for so many reasons. First of all, as much as I love my baked goods I hate running my oven on hot summer days.

It makes my kitchen feel like a sauna. I also love this recipe because I can make it in just one pan. Did I mention it taste good AND it's picnic friendly?

Usually, I make this recipe with sugar but in an effort to lighten up the sugar I made a sweet swap for SPLENDA® Sugar Blend.

It's a mix of SPLENDA® Brand Sweetener and sugar, so it provides only half the calories and carbohydrate of sugar.

Did you know: Not all yellow packets contain SPLENDA® Sweeteners? So make sure to ask for it by name at restaurants or coffee shops so your not surprised with something you didn't want.

Tips for Cooking & Baking with SPLENDA® Sweetener Products

You can use SPLENDA® Sweetener Products for all kinds of cooking and baking, but especially when used to sweeten in recipes. Just make sure to follow the conversion instructions, as it does not always convert cup-for-cup for sugar. It works really well with citrus to enhance the flavors and does a great job in baked goods like cookies and cakes!

    Ingredients

    • 3 C Blueberry Pie Filling
    • ½ C Whole Oats
    • ½ C All-Purpose Flour
    • ⅓ C SPLENDA Sugar Blend
    • ¼ C Melted Butter

    Instructions

    • Mix Oats, Flour, Sugar and Butter in a bowl.
    • Heat a medium skillet over a medium-low heat and add mixture. Spread it evenly throughout the pan.
    • Continue to stir and move the oats to prevent burning but keep a shallow, even layer in order to crisp the oats. Add more butter if necessary, to keep the oats moist until browned.
    • Once browned, spread the oats in a thin layer on a cookie sheet to cool and finish crisping.
    • In the same pan, now heat your blueberry pie filling.
    • Once heated, divide into jars and top with oats.
    • Seal the jars once everything is cooled.

This Blueberry Crisp looks so delicious! I also avoid the oven in the summer because it gets ridiculously hot here in FL. Thanks for sharing this recipe!
