Why does everyone love avocados? I mean, I don't really think they're all that flavorful, but everyone else loves them! Perhaps my taste buds are not sensitive enough, but I can definitely recognize that avocados have many, many health benefits.
I my self like guacamole, and I often like a few slices of creamy avocado on my sandwiches in the place of mayonnaise and cheese. Though I usually include the cheese, if I am perfectly honest. A GIRL HAS GOTTA LIVE HER LIFE A LITTLE!!
How to Make This Vegetarian Avocado Pasta Recipe
Vegetarian Avocado Pasta Recipe Ingredients
- 1 lb box of your favorite pasta, we used medium shells so were would be plenty of space for the super creamy sauce to fill in.
- 1-2 really ripe avocados (depending on size, pit size…)
- 2-4 tablespoons extra virgin olive oil or avocado oil
- salt and pepper to taste
- optional: fresh corn cut off the cob / fresh tomatoes sliced
Note: The crispness of the corn and the nice acidic bite from the tomatoes really add a nice touch to this otherwise soft, creamy pasta. I personally recommend cherry tomatoes or grape tomatoes, as they are easier to cut into smaller pieces for this dish. They also lend a beautiful burst of color to an otherwise bland looking dish.
Vegetarian Avocado Pasta Directions Recipe
Cook your pasta according to box instructions.
While that is boiling you can wash the avocados, cut them and remove the pit and then scoop the fruit into the blender along with the oil and a little bit of salt to start.
Blend on high until you have a super smooth and creamy texture. If the avocados are at the right spot of ripeness this should only take a few seconds. Taste and add additional seasonings accordingly.
When the pasta is done cooking strain as usual, return to the pot and toss with the avocado sauce. Plate and top with the warm fresh corn and chilled tomatoes along with a pinch of sea salt.
