    Today I am sharing this Ham Pickle Pinwheels Recipe using Smithfield Prime Fresh Lunch Meat, an easy snack that you can take along this summer - wherever the day takes you! 

    With the grounds thawing and the temperatures rising in most parts of the country, it's time to start planning our Summer activities! What better way to enjoy the summer sunshine than by packing up a picnic and heading to the beach or to your local park?

    Picnics are such a fun way to enjoy the outdoors - especially if you have children or pets that can tag along and enjoy the sunshine too!

    While Angeline is all grown up and isn't so much of a picky eater anymore, we face other challenges with her work schedule. She works nights, which means that she is usually in a rush during the early afternoon and she is not home for dinner.

    Quick and easy meals, preferably things that she can take with her to work for her dinner, are a must in our household! You might recall the Ham & Brie Sandwich recipe that I shared a while back - it's become a lunchtime staple around here because it's so easy to make and very filling - the perfect way for her to begin her day!

    This Ham Pickle Pinwheels recipe is a more "on the go" food, which she can easily throw into her lunch box (dinner box, in this case) and take with her to work.

    Why You'll love this Ham Pickle Pinwheels Recipe

    Since this recipe is best served cold, it's perfect for taking to the office, when you're planning on spending the day outdoors, or even to serve at a backyard BBQ as a fun appetizer or finger food!

    I love this Ham Pickles Pinwheels Recipe because it is really simple to make, and is a great source of protein AND carbohydrates because it has the perfect mixture of ham, pickle, and tortilla. The cream cheese holds everything together, as it acts like a "glue."

    The savory mixture of ham and pickles is just delicious - it's like having that pickle spear on the side of your ham sandwich...but it's inside!

    While these are light and refreshing, they're actually pretty filling, making them the perfect summertime snack that you can literally take anywhere!

    How to Make This Ham Pickle Pinwheels Recipe

    Ingredients (Per one wrap, which will make about 5 pinwheels)

    • 1 slice Prime Fresh Smoked Ham Lunch Meat 
    • 1 slice Ultra Thin Provolone Cheese
    • 2 tablespoon Cream Cheese Spread
    • 1 Dill Pickle Spears, cut into quarters
    • 1 Tortillas or Wraps

    Directions

    Begin by smoothing on a thin layer of cream cheese spread on top of a tortilla. This will act as the "glue" to hold the ingredients together in this recipe.

    Add a layer of Prime Fresh Smoked Ham Lunch Meat, then a slice of provolone cheese.

    Add another thin layer of cream cheese spread, and add another slice of Prime Fresh Smoked Ham Lunch Meat. 

    Cut a pickle spear into ⅓ and add it to the top.

    Begin rolling the tortilla tightly, as if you are making a wrap. I added a bit of cream cheese to the ends to seal it closed.

    I wrapped them in paper towels to keep them tight and put them in the fridge for 10 minutes to firm up before cutting. 

    Slice your pinwheels into ½ inch thick slices and enjoy!

    Go to Your Local Park! I am very fortunate in that I not only have a very large park near my home - literally across the street from me - but it also has a lake with a man-made beach that is open during the summer, walking trails, a playground for the kids and the children's favorite part...A WATER SLIDE!

    Parks are the perfect place for a picnic!

    Go Kayaking!

    I invested in an ocean kayak in 2015 and I have enjoyed so many a sunny day out on the water. Of course, not everyone has the space to store a kayak, but there are tons of groups out there that rent kayaks, canoes and paddle boards. You can even find discount rentals through sites like Groupon!

    Pack up a little personal cooler full of snacks with Prime Fresh lunch meat, plenty of water - and sunscreen - and get out there! It's a great way to get exercise AND have a little alone time. 

    Go to the Beach! (Or Lake)

    Depending on where you live, there is likely a beautiful beach or lake nearby. Hitting the water during the summer days is a great way to soak up some vitamin D, get out of the house, and connect with nature.

    While you'll likely have to pay for parking, the costs are minimal and the rewards are great - it's a very inexpensive way to get your kids out of the house during the summer months, or if you don't have kids, it's just a great way to get outdoors instead of just sitting in front of the TV all summer.

    You can pack snacks or a lunch and further reduce the costs of your outing.
