This is really a pretty simple recipe, but I am embellishing it with a new twist - something that I've never done before...I created a Dijon sauce to top it! HOLY SMOKES! It added such a depth of flavor, I am thinking that I might create this quick and easy sauce every time I make a simple chicken dish from now on!
How to Make Chicken Cordon Bleu with Dijon Sauce
Now, I am a single woman who lives alone, so when I cook dishes like this Chicken Cordon Bleu with Dijon Sauce Recipe, it is usually for myself and maybe one guest. You will want to double the ingredients to make dinner for 4.
Ingredients needed to make Chicken Cordon Bleu
- 2 chicken breasts
- 4 oz four cheese blend, shredded - or cheese of your choice. Swiss cheese is usually preferred
- 2 large slices of Smithfield® Anytime Favorites sliced ham
- Italian style bread crumbs
- 1 teaspoon Italian seasoning
- sprinkling of garlic salt and pepper
Dijon Sauce
- 4 tbsp butter
- ¼ cup flour
- 2 cups milk
- 5 tbsp. Dijon mustard
- ½ cup grated Parmesan Romano cheese or 4 blend cheese
- salt and pepper

Directions for how to make Chicken Cordon Bleu
Firstly, preheat your oven to 400 degrees F and line a baking sheet with parchment paper.
Then place each chicken breast between two pieces of plastic wrap and use a mallet to flatten them to about ¼" thick. I have a meat mallet, but you can also use a rolling pin - it will just take longer.
Next, top each chicken with a slice of ham and then a sprinkling of cheese.
I used about 3 tablespoons of cheese on each piece. Feel free to use as much as you want!
Sprinkle the Italian season and garlic salt and pepper on top, then roll up the piece of chicken tightly. I used bamboo skewers to hold each piece together.
Sprinkle your bread crumbs on the top of the chicken breasts and pat down to make sure that they stick during cooking.
Bake for 30 minutes.
The Dijon sauce is probably the hardest part of this recipe!
You're going to melt your butter over medium heat, and once it's melted, add in your flour and whisk until its golden. Add in 1 cup of the milk, then the dijon mustard and then whisk until it's nice and creamy.
It is going to be thick and that's okay! Keep adding the additional cup of milk until you reach the consistency you like. Next, add in your cheese and whisk away!
Now, this Chicken Cordon Bleu with Dijon Sauce Recipe tastes just fine without the Dijon sauce, but once you have it....you are never going to look at a chicken breast the same way!
I made a huge batch and even drizzled it over some chicken strips I cooked in the air fryer the next day. It's so good!
