Lately I’ve been obsessed with mini everything: bite size cookies, mini cupcakes, mini houses – even my office supplies are starting to come in micro sizes! Normally I would say it’s getting out of hand but really I’m loving it. So of course when I was tasked with creating a little something delicious for my family while we binge the Big Movie Awards this season my mind instantly went to something mini. Especially when it comes to dessert, I love that everyone can have their own perfectly portion bit of deliciousness. I decided to go with Mini Apple pies for a few reasons…

They’re so easy and fresh apples are available year round. This particular pie filling is my absolute favorite recipe because it taste really fresh with just the right amount of lemon juice to give it a bit of zest and it doesn’t get any more simple than throwing it all in a bowl and giving it a good mix.

A Fun Mini Apple Pie Recipe

A Fun Mini Apple Pie Recipe

Ingredients

  • 2 Sheets Your Favorite Pie Crust Recipe Swap Out Sugar for SPLENDA
  • 6 Golden Delicious Apples
  • 3/4 C SPLENDA® Granulated
  • 2 TBS Flour
  • 1 tsp Cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 TBS lemon juice

Instructions

  1. Preheat oven to 425
  2. Peel and core the 6 golden delicious apples. Cut them into chunks (not slices!)
  3. Mix apples with all other ingredients except pie crust.
  4. Roll out pie crust.
  5. Cut out 10 circles larger than those of the muffin tin you're baking them in.
  6. Gently form the pie crust into the muffin tin.
  7. Spoon apple filling.
  8. Ball and roll out remaining crust and cut out hearts shapes with a cookie cutter.
  9. Place the shapes on its own baking sheet.
  10. Put both recipes in the oven and bake 5 minutes then move the shapes to the top of the pies.
  11. Bake for the remaining 10-13minutes until pies are golden brown.
  12. Remove from oven and allow to cool.

For me, it’s really important to limit my families sugar intake. These days it feels like there are copious amounts of sugar in everything. So for this recipe I swapped out the sugar for SPLENDA® Sweetener Products. Swapping sugar for SPLENDA® Sweetener Products is so simple, basically, it swaps cup for cup so there are no tricky grade school fractions to try and balance. The great thing is, no one could even tell that it was made with SPLENDA® Sweetener Products instead of ‘real’ sugar.
