Mother’s Day is coming up and I just so happen to be going out of town with Angeline for this very important holiday. You see, in my family, Mother’s Day is akin to Christmas for us girls. My dad always arranges for my three little sisters and I to go out to brunch or lunch with our mom, to treat her extra special and make the holiday all about us. The only exception to this family tradition is last year, when I took my mother and Angeline to Disney World for Mother’s Day. DISNEY WORLD. That’s how important Mother’s Day is to our family! As the oldest of four daughters, I feel a little guilty about abandoning my mother and running off to Romania with Angeline…BUT IT IS ROMANIA. When Romania knocks on your email inbox, you grab your 19 year old daughter and run to the nearest airport. Sorry, mom. Needless to say, I have a lot of buttering up to do to prevent my mom from being upset with me this year! This Blueberry Lemon Muffin Recipe is so easy to make and let’s face it, mom’s LOVE muffins, right? I know that I do…make a simple little breakfast and deliver it in a basket and mom is sure to forget that you’re running off to Romania for Mother’s Day…or, at least that is what I am hoping.

Ingredients
  • 1.5 cups fresh blueberries
  • zest from 2 full lemons and juice from one lemon
  • optional, ¼ cup confectioners’ sugar to roll the blueberries in
  • ⅔ cup sugar
  • 2 eggs
  • ½ cup butter, soft to melted
  • 2 cups flour
  • 2 tablespoons baking powder
  • dash of fine sea salt
  • ¼ cup milk
Instructions
  1. Wash, dry and set aside the blueberries.
  2. Combine the eggs, butter and sugar together until smooth. Then add in the lemon zest and juice along with the milk, mix for one full minute before slowly starting to add in the dry ingredients (flour, baking powder and sea salt).
  3. When the batter is fully together, slowly fold in the fresh blueberries.
  4. Grease a mini muffin pan and then fill the wells evenly with batter. Bake at 375 degrees for 11 to 13 minutes or until the muffins are starting to turn golden and a toothpick comes out clean.

Make a Photo Book For Mom! I used to do this all the time for holiday gifts; I would gather the photos I’d taken of our family throughout the past year and have a photo book made and gift it to my mom. Moms LOVE photo books, guys.

Take Mom on a Date! Yes, that’s right! Take your mom to dinner, take her to the movies, take her to the farmer’s market…anything that makes her happy and makes her forget that you’re leaving town for Mother’s Day!

    As a stay-at-home dad, I’m constantly running out of ideas that men always use as a cop-out for Mother’s day. Breakfast in bed? That’s like, every other day. Clean up after dinner so she doesn’t have to? Yeah, that’s a daily chore.

    So now I have to actually come up with something new! Like, maybe butter Chardonnay!
