Ingredients

  • 2 tablespoons olive oil
  • 20 rainbow carrots
  • 8 ounces burrata
  • 4 oz pesto
  • dash Salt & pepper

Instructions

  • Preheat the oven to 450°F (230°C)
  • Heat oil in a skillet; add carrots and cook for 8 minutes.
  • Roast carrots 10–12 minutes, flipping halfway.
  • Toss with pesto.
  • Serve with burrata and extra pesto.
  • Season and enjoy!
