- 20 rainbow carrots
- 8 ounces burrata
- 4 oz pesto
- dash Salt & pepper
Preheat the oven to 450°F (230°C)
Heat oil in a skillet; add carrots and cook for 8 minutes.
Roast carrots 10–12 minutes, flipping halfway.
Toss with pesto.
Serve with burrata and extra pesto.
