- 2 tablespoons oil
- ¼ cup onion diced
- 1 tablespoon garlic minced
- ¾ cup white rice
- 1-½ cups chicken broth
- 1 cup ham chopped
- 1 teaspoon oregano dried
- 1 cup shredded cheddar cheese
- parsley chopped fresh , optional for serving
Add oil, onion and garlic in a skillet and mix well. Heat over medium low heat until onions are translucent.
Add rice broth, ham and oregano and bring to a boil. Reduce heat to simmer and cover.
Cook for 15-20 minutes or until rice is tender and most of liquid is absorbed.
Stir in half of the cheese.
Sprinkle remaining cheese on top and cover until melted, about 1-2 minutes.
Sprinkle with chopped fresh parsley, if desired, before serving.
